Keto-Friendly Beef Stew Recipe

 

 

Beef stew is a comforting classic that can be enjoyed even on a keto diet with just a few adjustments. This recipe ensures you get a hearty meal while keeping your carb intake low. We used homemade chicken stock and tomato paste. We had some jalapenos we needed to use so we seeded them, diced them and added it to our beef stew.  If you aren't watching your carb intake, you can easily serve this with rice or noodles.

 

Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups broth (if you are buying this from the store make sure to grab the low sodium and no added sugar)
  • 1 cup celery, chopped
  • 1 cup mushrooms, sliced
  • 3 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon sage
  • 1 teaspoon rosemary
  • ½ teaspoon nutmeg
  • Additional Salt and pepper to taste

 

Instructions

  1. Prepare the Beef:
    • Season the beef cubes with salt and pepper.
    • In a large pot or Dutch oven, heat the olive oil over medium-high heat.
    • Add the beef in batches, browning each piece on all sides. Remove the beef and set aside.
  2. Cook the Vegetables:
    • In the same pot, add the vegetables. Sauté until the onions become translucent.
  3. Combine Ingredients:
    • Return the beef to the pot. Add the broth, tomato paste, Worcestershire sauce, thyme, sage and rosemary.
    • Stir well to combine all the ingredients.
  4. Simmer:
    • Bring the stew to a boil. Reduce the heat to low and cover the pot.
    • Let it simmer gently until the vegetables reach your desired level of doneness. We like ours al dente, so our simmer time was around 20-25 minutes.
  5. Season and Serve:
    • Before serving, taste the stew and adjust the seasoning with salt and pepper as needed.

 

**Note** If you want your stew meat to be more tender, you can simmer the meat after your sauté the onions for about 1 - 1 ½ hours before you add the rest of the vegetables.
