Deconstructed Greek Stuffed Peppers
Deconstructed Greek stuffed peppers provide all the delightful flavors of traditional stuffed peppers but with a modern twist. This version simplifies the preparation process while still delivering a hearty, satisfying meal. When we made this meal we didn’t serve it with rice and that really made it a low carb meal. When you are buying your tomatoes and tomato paste be sure to select the low sodium products.
Ingredients
- 1 lb. ground beef
- 1 tbsp olive oil
- 1 yellow onion, diced
- 3-4 bell peppers, chopped (use a mix of red, green, and yellow for color)
- 3 cloves garlic, minced
- 2 tsp dried oregano
- 1 tsp ground cumin
- ½ tsp cinnamon (optional but adds a Greek flair)
- ¼ cayenne pepper
- ½ tsp basil
- ½ tsp fennel (this gives it a Mediterranean kick)
- 1 can (14.5 oz) low sodium diced tomatoes
- 1 tbsp low sodium tomato paste (click here to make your own tomato paste)
- Optional: 1 cup cooked white rice
- Salt and pepper, to taste
- ½ cup crumbled feta
- Fresh parsley, chopped, for garnish
Instructions
- Sauté the onions: In a large skillet, heat olive oil over medium heat. Add diced onion and cook until soft, about 5 minutes. Stir in garlic and cook for another 30 seconds until fragrant.
- Cook the Meat: Add ground beef to the onions and garlic. Break it up with a spatula and cook until browned and fully cooked. Drain excess fat if needed.
- Add Peppers, Spices, Tomatoes & Tomato Paste: Toss in chopped bell peppers. Cook for 4–5 minutes until they begin to soften. Stir in oregano, cumin, cinnamon (if using), cayenne, basil, fennel salt, and pepper. Stir in diced tomatoes and tomato paste. Let it simmer for 5–10 minutes until the mixture thickens slightly.
- Mix or Serve with Rice: Add cooked rice or orzo directly into the pan or serve it underneath as a base.
- Garnish: Sprinkle with crumbled feta and chopped parsley.
