Homemade Pizza Dough

Creating the perfect homemade pizza dough is a rewarding culinary endeavor that can elevate your pizza experience to new heights.  The quality of your ingredients, particularly the flour and yeast, will significantly impact the texture and flavor of your dough. We like our pizza dough to have a little more texture and flavor, so we swap out 1/2 of all-purpose flour for 1/4 cup whole wheat flour and 1/4 cup buckwheat flour.  We also try to limit the amount of oil we are using. 

 Ingredients:

  • 2 1/4 teaspoons of active dry yeast,
  • 1 1/2 cups of warm water (about 110°F),
  • 3 cups all-purpose flour,
  • ¼ cup wheat flour
  • ¼ cups buckwheat flour
  • 3 1/2 to 4 cups of all-purpose flour can be used if you prefer a lighter color crust
  • 2 tablespoons of olive oil
  • 1 teaspoon of sugar
  • 1 teaspoon of salt.

Directions:

The quality of your ingredients, particularly the flour and yeast, will significantly impact the texture and flavor of your dough. We like our pizza dough to have a little more texture and flavor, so we swap out 1/2 cups of all-purpose flour for 1/4 cup whole wheat flour and 1/4 cup buckwheat flour.  We also try to limit the amount of oil we are using.

  1. Start by activating the yeast. In a measuring glass, combine the warm water, sugar, and yeast. Allow the mixture to sit in a dark area (we sit ours in a cabinet and close the door) for about 5 minutes or until it becomes frothy, indicating that the yeast is active. While the yeast is sitting you can go ahead and start the pizza dough. In a mixing bowl combine the salt, and 3 cups all-purpose flour, ¼ cup wheat flour and ¼ cups buckwheat flour. Pour in the yeast mixture and mix until a loose batter forms, then gradually add more flour, if needed, until the dough begins to pull away from the sides of the bowl and is no longer sticky. Once the dough has come together, transfer it to a lightly floured surface and knead for about 8-10 minutes until it becomes smooth and elastic.
  2. After kneading, place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm, draft-free area for at least 30 minutes, or until it has doubled in size.
  3. While the dough is rising you can get your toppings ready. Slice an array of fresh vegetables such as green bell peppers, baby Portabellas mushrooms, onions, and  black olives. Once you cooked the Italian sausage, remove it from the skillet and add your sliced baby Portabellas mushrooms to the skillet. In our opinion cooking them for just a few minutes  gives them more flavor.  These ingredients not only add vibrant colors but also a range of textures and flavors to your pizza.
  4. Once the dough has risen, punch it down to release the trapped air and divide it into desired portions. Roll out the dough on a floured surface to your preferred thickness, then transfer it to a pizza stone.
  5. Now, you're ready to add your home-made pizza sauce and your favorite toppings and bake your pizza in a preheated oven at 475°F for about 10-15 minutes, or until the crust is golden and the cheese is bubbly. We also like our crust to have a buttery flavor to it, so we will brush the crust with melted butter about 5 minutes before it is done baking in the oven.
