How to Cook Spaghetti Squash

Cooking spaghetti squash is a great way to enjoy a healthy, low-carb alternative to pasta. This versatile vegetable can be prepared in a few simple steps. 

Not only is spaghetti sauce a healthier option for pasta but is super easy to make and oh so tasty.  We like ours to be al dente, so we bake it for about 30 minutes depending on the size of the squash. If you prefer yours a little softer you would cook it for about 40 minutes.  This has become one of our weekly staples.  We always have this with pasta sauce and meatballs.  The pasta sauce is something we canned last summer. We meal prep the meatballs on Sunday evening, so this is a super easy through together meal.

 

Step 1: Preheat and Prepare
Start by preheating your oven to 400°F (200°C). While the oven heats, wash the spaghetti squash thoroughly under running water. Next, cut the squash in half lengthwise using a sharp knife. This can be a bit challenging due to its tough skin, so take your time. Once halved, scoop out the seeds and stringy pulp from each half with a spoon.

Step 2: Season and Roast
Lightly drizzle the cut sides of the squash with olive oil and sprinkle with salt and pepper to your liking. Place the squash halves cut side down on a baking sheet lined with parchment paper or aluminum foil.  This positioning helps to caramelize the edges and lock in moisture, resulting in tender strands. Poke a few holes in the skin of the squash with a fork. Roast in the preheated oven for about 40-50 minutes, or until the flesh is easily pierced with a fork. We like to serve ours a little al dente, so our cooking time is closer to 35- 40 minutes (depending on your oven and tastes). 

Step 3: Scrape and Serve
Once the squash is cooked, remove it from the oven and let it cool for a few minutes until it’s safe to handle. Using a fork, scrape the flesh of the squash lengthwise to create those famous spaghetti-like strands. You can serve the spaghetti sauce in the squash, or you can remove the spaghetti-like strand and serve in a bowl or plate. You can serve the spaghetti squash as is, or mix it with your favorite pasta sauce, sautéed vegetables, or protein. It’s a versatile base for countless nutritious meals!
