This salad is also highly nutritious. Cucumbers are hydrating and low in calories, providing a good source of vitamins K and C. Red onions are rich in antioxidants and have anti-inflammatory properties, while tomatoes are packed with vitamins A and C, potassium, and lycopene, an antioxidant linked to numerous health benefits. By making your own dressing for this salad you are in complete control of what goes into the salad. This salad is a delightful way to incorporate more vegetables into your diet, offering a wholesome, flavorful, and healthful addition to your culinary repertoire.

To prepare this salad: start by thinly slicing cucumbers and red onions and chopping ripe tomatoes into bite-sized pieces. The cucumbers add a crisp and cool element, while the red onions contribute a sharp, tangy note that balances the sweetness of the tomatoes. For added depth of flavor, you can sprinkle a pinch of salt over the vegetables to draw out their natural juices.

To prepare the salad dressing:

In a salad dressing shaker add:

  • ⅔ cup of Balsamic Vinegar
  • ½ cup Olive or canola oil
  • 2 pressed garlic cloves
  • 1/4 Tsp. dried basil,
  • ¼ Tsp. salt
  • 1/2Tsp. dried oregano
  • ¼ Tsp. dried onion powder
  • 1 Tbsp. sugar

Mix and pour onto the salad. Cover and refrigerate until you are ready to serve it. This is something that I would make and serve the same day If you have an herb garden, or fresh herbs feel free to swap out the dried herbs for the fresh ones. Using herbs will only add to the salad’s aromatic profile. Last time I made this salad I accidentally added sage as well. It was good addition to the salad.
