Easy Slow Cooker Pot Roast

As soon as there is a cool rainy day in the forecast this hearty meal is a must have in our house. It is so simple and delicious to make, and it is completely customizable based on your diet and preferences. One of our favorite steps is to sear the roast in a cast iron skillet before we put it in the slow cooker. This step adds about 10-15 minutes to your prep time, but we feel like it adds a so much flavor of the roast. If you are short on time, you could skip this step. We also like our vegetables al dente, so if we are making this on the weekend or a work from day, we will wait about 3-4 hours before we add the vegetables to the slow cooker. Why I like this recipe so much.

I especially like to make this meal when we are meal prepping and want some leftovers to take for lunches during the week or if I am having the kids over to eat. This one pot meal also goes great with a batch of homemade biscuits. This slow cooker recipe delivers tender, juicy beef and flavorful vegetables every time.

 

What cut of meat should I use?

The best cut of meat for a pot roast is typically a chuck roast. It's well-marbled, which makes it perfect for slow cooking, resulting in tender, flavorful meat. If you want a leaner option, I will use a bottom round roast. Since it may be leaner, it would benefit from longer cooking times for optimal tenderness.

 

How big should my roast be?

The recipe I am using calls for a 3–5-pound chuck roast. If you are serving about 5 people, then I would go with a 3-pound roast. You can plan on a 5-pound roast serving about 8 people. We like to have leftovers, so we typically go with a larger roast whenever possible.

 

 

Slow Cooker Pot Roast Recipe

Ingredients:

  • 3-4 pounds beef chuck roast
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 large carrots, peeled and cut into chunks
  • 4-6 Red potatoes, I like to leave my potatoes whole, but you can peel and chunk them if you want to.
  • 2 cups beef stock (we like to make our own beef stock)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 ½ Tablespoons of cornstarch can be added to your beef stock if you want a thicker gravy.

 

Instructions:

  1. Prepare the Beef:

    Season the beef chuck roast generously with salt and pepper on all sides.
  2. Sear the Beef:

    In a large cast iron skillet, heat the olive oil over medium-high heat. Sear the roast on all sides until it’s browned, about 4-5 minutes per side. This step adds flavor to the roast. Place the roast in the crock pot.
  3. Layer the Ingredients:

    Place the potatoes and carrots on top of the roast.
  4. Make the Sauce:

    Using the same cast iron skillet add the onions and sauté for a few minutes. Add the minced garlic, beef stock, Worcestershire sauce, thyme, and rosemary. Mix well and pour this mixture over the roast and vegetables.
  5. Cook the Roast:

    Cover the slow cooker with its lid and cook on low for 8-9 hours or on high for 4-6 hours. This time may vary depending on the size of your roast. The roast is done when it’s fork-tender and the vegetables are soft.
  6. Serve:

    Transfer the roast and vegetables to a serving platter. If desired, you can use the liquid left in the slow cooker as a gravy. Simply strain it, and if you want a thicker consistency, you can reduce it in a saucepan over medium heat. Serve the pot roast hot.
