Quick Southern Banana Pudding

Ingredients:

  • 1 family size box of instant vanilla pudding mix
  • 2 cups cold whole milk
  • 1 tub (8 oz) whipped topping (like Cool Whip), thawed and divided
  • 1 box (12 oz) vanilla wafers
  • 4-5 ripe bananas, sliced

Instructions:

  1. Prepare the Pudding:

    • In a large mixing bowl, whisk together the instant vanilla pudding mix and the cold milk until smooth and thickened.
  2. Fold in Whipped Topping:

    • Gently fold in half of the thawed whipped topping until the mixture is smooth and fluffy. This step adds a light, airy consistency. Cover and place in a refrigerator for about 10 minutes or until it sets.
    • While it is setting, I like to slice my bananas and get them ready to use.
  3. Layer the Ingredients:

    • In a glass baking dish or a trifle bowl, begin assembling the banana pudding by layering the ingredients. Start with a layer of vanilla wafers at the bottom.
    • Add a layer of sliced bananas on top of the wafers.
    • Spread a layer of the pudding mixture over the bananas.
    • Repeat the layers until you run out of ingredients, ending with a layer of the pudding mixture on top.
  4. Chill:

    • Cover the dish with plastic wrap and refrigerate for at least 2 hours before serving. This allows the flavors to meld together and the wafers to soften slightly.
  5. Serve:

    • Just before serving, you can garnish the top with additional vanilla wafers or banana slices if desired.

Enjoy your delicious, quick Southern banana pudding!
