To make the homemade chicken fajita seasoning:

Ingredients:

  • 2Tbsp. of chili powder
  • 1 Tsp. of paprika
  • 1 Tsp. of sugar
  • 1/2 Tsp of garlic powder
  • 1/2 Tsp of onion powder
  • 1/2 Tsp of ground cumin
  • 11/2 Tsp of salt
  • 1/2 Tsp of black pepper
  • 1/ Tsp of cayenne pepper for a bit of heat.

Combine all these spices in a bowl and mix well. You can make a big batch and store the seasoning in an airtight container. It will keep for several months.

To Make Fajitas:

  • 2 boneless, skinless chicken breasts, sliced in half lengthwise
  • 1 of each (red, orange and yellow) bell peppers sliced into strips
  • 1 onion sliced into strips
  • optional 1 jalapeno (seeds removed) and sliced into strips.
  • Flour tortilla shells
  • Any other toppings you want. Some of the toppings we like to use are lettuce, tomatoes, cheese, salsa and sour cream.

Directions:

  1. After you have sliced the chicken breasts in half lengthwise you are going to pat them dry with a paper towel. Be sure to pat both sides. Patting your chicken dry will help the fajita seasoning stich to the chicken better.
  2. Sprinkle your homemade seasoning generously over your chicken pieces be sure to coat both sides before cooking.
  3. Place a little bit of oil in your cast iron skillet and heat over medium heat. Cook the chicken until the inside temperature reaches 160 degrees. This seasoning blend will impart a delicious, smoky, and slightly spicy flavor that’s perfect for fajitas. Once your chicken has finished cooking remove it from the skillet and place on the cutting board.
  4. Add a little more oil to the skillet if needed and put the peppers and onions in to cook. Cook them until they reach your desired texture. We like ours a little al dente, so it doesn’t take ours very long to cook.
  5. You can slice the chicken into strips while the vegetables cook and heat your tortilla shells.
  6. Once the vegetables are finished cooking, I like to toss the chicken back into the skillet for a minute. This allows the seasoning from the chicken to mix a little bit with the vegetables and ensures that the chicken is nice and hot.
