Greek Style Stuffed Peppers

 

Stuffed peppers are a delicious and versatile dish that can be enjoyed as a main course or a delightful side. This Greek style stuffed pepper recipe incorporates classic Mediterranean flavors, making it a flavorful and healthy option for any meal.  

We have tried many different recipes for stuffed peppers over the years and this is definitely one of our favorites.  One of the tricks we have found to reduce the time it takes for the stuffed peppers to bake in the over is to bake the peppers while we are cooking the quinoa and preparing the filling.  Just add a little bit of water to the baking dish, place the cut peppers in the water and bake.  Sometimes we will chop the peppers up and cook it with the filling and eat it as a protein bowl.  

For the Peppers

  • 3 large green bell peppers 
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 1 pound ground beef
  • 1 cup cooked quinoa (you can substitute rice)
  • 5 ounces crumbled feta cheese
  • 1 10.5 ounce can of diced tomatoes (or 1 cup fresh diced tomatoes)
  • 1 1/2 Teaspoons garlic powder
  • 1 1/2 Teaspoons ground cumin
  • 1 Teaspoon coriander
  • 1 Teaspoon oregano
  • 1Teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/8 Teaspoon cayenne pepper

 

Instructions:

Preparing the Peppers

  1. Preheat your oven to 350°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes. 
  3. Arrange the peppers in a cast iron skillet or baking dish, cut side up. Add a little bit of water and place in the oven and bake while you make the filling. 

Making the Filling

  1. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until they become translucent.
  2. Add the ground beef to the skillet, cooking until browned and no longer pink. Drain excess fat if necessary.
  3. Stir in the cooked quinoa, crumbled feta cheese, diced tomatoes, parsley, oregano, cinnamon, salt, and pepper. Mix until well combined.
  4. Spoon the filling mixture into each of the prepared bell peppers, packing it in gently. Sprinkle with feta cheese.
  5. Bake for about 15 minutes, or until the peppers are tender and the filling is heated through.
