Tuscan Beef Flank Steak with Gnocchi and Vegetables

 

Tuscan beef flank steak with gnocchi is a dish that epitomizes the richness of Italian cuisine, blending robust flavors and hearty textures to create a meal that is both satisfying and memorable.

While many people like to use a marinade with their steak, we like to cook ours with a homemade dry rub with spices we already have. To help ensure that our steak stays juicy we sear it to seal the juices in. Once the flank steak is seared to perfection, it will have a beautiful crust while maintaining a juicy, tender interior. The key to cooking flank steak is to ensure it is cooked to medium-rare to medium, as overcooking can result in a tougher texture. Once you have cooked the steak it needs to rest for about 5 minutes. When slicing your steak, it very important to slice it thinly and against the grain, ensuring each bite is tender and flavorful. In this recipe we are pairing it with some sautéed vegetables and gnocchi.

 

Serving Tuscan beef flank steak can be as simple or as elaborate as you desire. It pairs wonderfully with a variety of side dishes such as roasted vegetables, garlic mashed potatoes, or a fresh arugula salad drizzled with balsamic vinegar. Ingredients:

  • 1 tablespoon olive oil
  • Italian spice rub
  • 1 pound flank steak
  • 1 onion, thinly sliced
  • 1 teaspoon minced garlic
  • 1 (6 ounce) package fresh button mushrooms, sliced
  • 1 red bell pepper, cut into strips
  • 1 yellow bell pepper, cut into strips
  • 1 (14.4 ounce) can diced tomatoes drained
  • 1 (1 pound) package potato gnocchi
  • Ingredients for Italian Spice Rub:

Ingredients for Italian Seasoning:

  • 2 tablespoons Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon ground black pepper
  • ½ teaspoon salt

**To make your own Italian spice rub add the following ingredients in a small bowl.

  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • ½ teaspoon crushed red pepper flakes (optional, for a bit of heat)
  • 1 teaspoon dried parsley
  • 1 teaspoon dried sage

In a small bowl, combine all the dried herbs and spices. Ensure they are well-mixed to distribute the flavors evenly. To use the Italian spice rub, pat the meat dry before you sprinkle the spice mix over the food. Rub it in gently to ensure even coverage. Allow the flavors to meld by letting the coated food sit for at least 30 minutes before cooking.

 

 

Directions:

  1. Pat both sides of the flank steak dry (we use paper towels). Sprinkle the run half on top side of the flank steak and pat or “rub” it in. Flip the steak and repeat on the other side.
  2. Heat the olive oil in a skillet over high heat. Add beef and cook until browned, about 2 minutes. Allow the beef to sit for about 5 minutes before you thinly slice it (remember to slice against the grain).
  3. Reduce heat to medium, then stir in the onion and garlic, and cook until transparent, about 5 minutes or until they reach the desired tenderness. Toss in the mushrooms, red peppers, and yellow peppers and cook until tender or about 5 minutes. We like our vegetables a little more al dente, so our cook time is less about 3 minutes. Stir in the tomatoes and bring to a boil over medium-high heat. Reduce heat to low and simmer until sauce thickens, about 5 minutes. Combine the beef with the tomato mixture and stir.
  4. Meanwhile, bring a large pot of lightly salted water to a boil over high heat. Add gnocchi and cook until they float, 2 to 3 minutes. Drain, then toss the gnocchi in the sauce and serve.

**Notes: we put the steak and vegetables in a bowl and cooked the gnocchi in the skillet for a few minutes by itself. We did this so it gets a little more firm or crispy on the outside. We added the vegetables steak back in, mixed it up and then served it.
